Sweet Hearts for your Sweet Mom
This Mother's Day, treat the mothers in your life to a special treat! Chef Brent's "Sweet Hearts for your Sweet Mom"
Fragrant Orange Pastry Ingredients: 150 grams unsalted butter 75 grams powdered sugar zest of 1 orange 2 egg yolks 1 spoon orange water (or rose water) 250 grams flour Instructions: Preheat oven to 350 degrees. Place all ingredients in a mixing bowl and use hook attachment to mix until smooth dough is formed. Rest dough for 30 minutes before using. Roll dough to 1 mm thickness and use a heart shape cutter to stamp out hearts. Place on baking sheet and bake for 7 minutes on 350 degrees.
Raspberry Coulis Ingredients: 2 cups (500 grams) frozen or fresh raspberries 1/2 cup (125 grams) sugar 1 cup port wine 1 tsp cornstarch dissolved in 1/4 cup water Instructions: Place raspberries, sugar, and port in stainless pot. Bring to a simmer on medium heat. Add cornstarch and cook for 3 minutes. Sauce can be served as is, or further strained to increase smooth texture.
Pastry Cream Ingredients: 1 liter milk 6 tbsp (65 grams) cornstarch 1 cup (250 grams) sugar Instructions: Place all ingredients together and whisk for approximately 5 minutes over moderate heat until mixture is thick. Cook for another 3-4 minutes until flour flavor disappears. Use as a filling for dessert of add a liquor of your choice and fold into whipped cream for a smooth custard.
Assembling Sweet Heart dessert Assemble using 3 pastry hearts, 1 cup of pastry cream, and 2 tbsp of raspberry coulis. Garnish with fresh raspberries.
